Abigail: White Chicken Chili

Abby: Sourdough Cinnamon Rolls

Dough:
* 2¼ cups White Kamut flour or 2½ cups organic all-purpose flour
* 2 Tbsp sugar
* 1 tsp baking powder
* ½ tsp baking soda
* 1 tsp French gray coarse salt
* ½ cup soft butter
* 1 cup milk
* ½ cup sourdough discard

Filling:
* ½ cup soft butter
* ½ cup sugar
* ½ cup brown sugar
* 2 tsp cinnamon

Frosting:
* 8 oz cream cheese
* 4 Tbsp butter
* 2 cups powdered sugar
* 2 tsp milk
* 1 tsp vanilla
* 2 tsp fresh lemon juice

1. Using a dough hook or whisk, mix all dry ingredients together.
2. Cut in the butter using a dough hook or fork.
3. Add milk and discard. Mix well to make a cohesive dough. Knead for five minutes, adding any additional flour needed to make a soft dough.
4. Place in a covered bowl and leave to rise/ferment on the counter for 2-4 hours.
5. Pour dough out onto a floured surface and roll into a large square (the size is not overly important, but maintain a nice dough thickness for rolling
6. Preheat the oven to 350°F.
7. Roll out dough into a large square. Add filling.
8. Roll up tightly and cut into 1" rolls. Place tightly together in a 12" cast iron pan.
9. Bake for 30-35 minutes. Be sure to remove rolls from cast iron while still warm, otherwise, the sugars begin to solidify and will stick to the pan.
10. Spread frosting once cooled.
